Blackened Chicken with Creamy Avocado Sauce

Blackened Chicken with Creamy Avocado Sauce

Blackened chicken has long been a favorite of mine and it was about time I put together a recipe for it. In case you didn't know, the "blackened" part of the name refers to the Cajun seasonings the chicken's coated in, not the actual chicken being blackened––like I always thought when I was younger... oops. I used to always order blackened chicken Caesar salad wraps from my local deli for lunch––they were the best! I loved the spicy flavor of the chicken paired with the creamy, cooling, Caesar dressing! I think these seasonings can be a bit too much on their own, so I them paired with a delicious creamy avocado sauce to counteract the spiciness. The sauce also brought me even closer to that salad wrap I used to enjoy! This avocado dressing has been a staple in my kitchen for the past few months. In fact, it was the first recipe I created when I began eating Paleo––I loved it on all types of grilled meats and even on salads. The sauce helped me transition to my healthier diet, as it took the place of the ketchup, Worcestershire sauce, and creamy salad dressings I could no longer eat. It was also great because it gave me a nice serving of healthy fat to keep me full, when at the time, I wasn't a huge fan of avocados and didn't eat much fat otherwise. So, if you're not already obsessed with avocados, this is a great way to ease yourself into eating them as it has a very mild flavor. I hope you enjoy this avocado sauce as much as I do, and I guarantee you, this will become a popular dish in your kitchen!

Blackened Chicken with Creamy Avocado Sauce

Prep Time: 10 min Cook Time: 10-15 min Total Time: 20-25 min Serves: 6

Ingredients Creamy Avocado Sauce

  • 1 avocado, seed removed

  • 6 tbsp extra virgin olive oil

  • 2 tbsp lemon juice

  • 2 tbsp cold water

  • ½ tsp sea salt

  • ½ tsp crushed black pepper

Blackened Chicken

  • 2lbs chicken (any parts)

  • 1½ tbsp garlic powder

  • 2 tbsp paprika

  • 2 tsp black pepper

  • 2 tsp onion powder

  • 1 tsp cayenne pepper

  • 2 tsp oregano

  • 2 tsp thyme

  • 1 tsp crushed red pepper, optional

  • 1/2 tsp sea salt

  • olive oil, to coat chicken

  1. To make the avocado sauce, put avocado into a food processor or blender with olive oil, lemon juice, cold water, salt, and pepper, and blend until well combined. This can be made ahead of time and stores best in an airtight container in the fridge.

  2. To make the blackened chicken, mix all ingredients, except the chicken and olive oil, in a small bowl and set aside. Generously coat both sides of each piece of chicken with olive oil. Lightly cover each piece of chicken with the spice mixture and spread it into the oil with the back of a spoon. Grill chicken to your liking.

  3. Serve the chicken with a generous spoonful of avocado sauce on top and enjoy!
