Okay so, this post is a bit overdue... considering it's almost November. But, I'm not one of those people who reserves grilled foods solely for the Summertime. Why not enjoy delicious grilled and smoked foods all year round? Anyway, this "recipe" is a really easy way to mix up your everyday salad and add in some new flavors and textures. This is really more of a base recipe, for grilling the romaine––you could add in any extra toppings and toss this with just about any salad dressing you like and it would probably make for a delicious salad! Oh, the possibilities. I love grilling romaine hearts because their crunch holds up to the inevitable wilting from the flame of the grill, though I'd imagine that any other crunchy lettuce would also work well in it's place.
Prep Time: 5 min Cook Time: 2 min Total Time: 7 min Serves: 4-6
2 romaine hearts
4 tbsp + 2 tbsp olive oil
1 tbsp red wine vinegar or fresh lemon juice
Your preferred salad toppings
Light your grill.
Slice each romaine heart down the center and rub 1 tbsp of olive into each of the cut sides.
Place the hearts cut side down on your grill, and grill until charred (about two minutes).
Remove from grill, chop the lettuce, and add to a medium sized serving bowl.
Top the lettuce with any other salad ingredients you like, toss with the vinegar and remaining 2 tbsp olive oil and enjoy!
