This recipe was another one of those cooked up in my mind, as I'm trying to fall asleep dishes that I even woke up still thinking about! This easy salmon dish is definitely going to be a permanent part of my weekly menu. The flavors of this Mediterranean rub pair perfectly with the delicate flavor of salmon––and I'm sure it would go great on other meats (I was thinking grilled chicken as I was eating it). In the next few weeks of meal planning and recipe testing, I'm working on trying some cuisines––outside of my comfort zone. In the line-up (along with plenty more Italian dishes) is another Mexican dish, 1-2 Cuban dishes, a Greek dip, a Middle Eastern dish, and a few American side dishes and desserts––so stay tuned! I'm also working my way up to some Asian dishes, but those will come a bit later as I never really ate much Chinese, Japanese, or Thai food even before Paleo.

2lbs salmon filet
¼ cup olive oil
½ cup sun-dried tomatoes
8 grape tomatoes, halved
4 large garlic cloves
1 tbsp lemon juice
3 tsp fresh basil (roughly 6 large leaves)
1 fresh lemon (for serving)
Preheat oven to 350 degrees F.
Put 2 tsp of basil (about 4 large leaves) into a mini food processor, and pulse 2-3 times. Add in your garlic and pulse until finely minced and mixed into the basil. Add in the sun-dried tomatoes, olive oil, and lemon juice and process until a paste has formed, scraping down the sides as necessary.
Place your salmon filet on a baking sheet lined with parchment paper. Evenly coat both sides of the salmon with the Mediterranean rub. Chop the remaining teaspoon of basil and sprinkle on top.
Place your halved grape tomatoes cut-side down on top of the salmon (so the juices soak into your fish as it cooks!) Put in oven and bake for 30 minutes.
Salmon cooks on 350 for 15 minutes per pound. Be sure to take this into consideration if scaling this recipe up or down and adjust cooking time accordingly! Remove from oven, serve immediately with lemon wedges on the side, and enjoy!
