I had no idea what it was going to be like, starting a blog. My friends had been telling me for so long that I should do something like this and I decided to make it my Summer project––not realizing how much time it would eat up! I've been burning myself out the past couple of days, between designing this site and getting everything to work the way I wanted, cooking, photographing, and creating these posts, I haven't even had time to go on a single bike ride, which I was looking forward to all last semester at school! I think I'm just so excited to start sharing my recipes that I want to get as much on here as quickly as I can! So, I decided to take yesterday to come down from the high of finally putting together this blog––and I wanted to put together a quick and easy dinner that would also help to clean up the growing collection of leftovers in my fridge. After making stuffed poblano peppers earlier in the week, I was left with a good amount of pineapple-tomatillo salsa, so I decided just to make some Mexican-flavored burgers to go with it. It turns out that this salsa pairs just as well with these burgers as it did with the stuffed peppers!
Prep Time: 10 min Cook Time: 10 min Total Time: 20 min Serves: 4
2lbs ground beef
1-1½ cups Pineapple-Tomatillo Salsa
1 tbsp cumin
1 tbsp chili powder
1 tsp coriander
Mix all spices together in a small bowl, then mix well into ground beef. Separate beef into four even patties, and grill.
Top burgers with sliced avocado and tomato, then pour on the pineapple-tomatillo salsa and enjoy!
