Pan Grilled Fennel and Tomatoes

Not too long ago, I had grilled fennel out to dinner with some friends and it opened me up to a whole new world! I'd recently been learning about the health benefits of having fennel in your diet so I've been trying to make it a point to eat it more often. A few weeks ago, I also had it on top of a chicken "sandwich" ––sans bread, of course. The fennel was pickled with red bell peppers and mustard seeds––it was amazing! I've also always loved grilled tomatoes even more than fresh tomatoes, so I thought I'd try grilling the two together to serve similarly to a Caprese salad. The grilled vegetable slices were delicious with just olive oil and a sprinkle of salt and pepper on top! Grilled fennel is almost like candy, it keep it's licorice-like flavor, but paired with the flavor from the char of the grill or grill pan, the outside begins to caramelize, and drizzled with olive oil, it is to die for!

Pan Grilled Fennel and Tomatoes

Prep Time: 5 min Cook Time: 10 min Total Time: ~15 min Serves: 4

Ingredients

  • 2 fennel bulbs

  • 3 vine or beefsteak tomatoes

  • 2 tbsp extra virgin olive oil, plus more for topping

  • 8-10 fresh basil leaves, chopped

  • salt and black pepper to taste

Preparation

  1. Cut off the stems and feathery tops from the fennel bulbs. Slice the bulbs lengthwise, about ½” thick and place in a mixing bowl. Slice the tomatoes 1” thick and place in the mixing bowl with the fennel.

  2. Gently toss the sliced vegetables with 2 tbsp olive oil.

  3. Heat a grill or grill pan to high heat.

  4. Working in batches, place the tomatoes and fennel onto the grill pan (in one layer). Grill the tomato and fennel slices until lightly charred. The fennel will cook for 5-6 minutes per side and the tomatoes will cook for 2-3 minutes per side. Continue to do this until all vegetable slices are grilled, charred, and the fennel is slightly translucent.

  5. Sprinkle the chopped basil over the fennel and tomatoes and top with olive oil, salt, and black pepper to taste. Serve room hot or at room temperature, and enjoy!
